Ingredients:
2 Tbsp Extra virgin olive oil
1 Medium onion chopped
3 Cloves garlic peeled and smashed
1 Tbsp Fresh thyme leaves
2 - 28 ounce cans whole fire roasted tomatoes
1 - 14.5 ounce can vegetable broth
1 Chipotle chile in adobe sauce chopped
1 Stick butter, softened
Directions:
In a saucepan, heat the olive oil over medium heat. Add the onion, garlic, and thyme and cook for 10 minutes. Add the tomatoes, vegetable broth and chipotle. Lower the heat and simmer for 15 minutes. Using a blender, puree the soup.

Ok - I typed the recipe and what the heck is the 1 stick of butter softened doing on the smoky tomato soup recipe????
